Best Brownies Ever, Fairtrade, Gluten-Free, Dairy-Free, with Free-Range Eggs in just TEN STEPS
It's not every day that you go to someone's funeral and taste a cake that is so deliciously chocolatey and gooey and chewy, all that same time, that you have to ask the person who gave it to you from her tin, for the recipe. 'Ah', she responded,'It is a secret family recipe and I can't tell it to you.' I knew that I had to get that recipe, it couldn't remain a secret any longer, I wanted my customers in my shop to be able to enjoy a slice of this indulgent deliciousness with their coffee. Poor lady at the funeral, I followed her around asking and asking, finally, she smiled a secret, cheeky smile and told me the truth, that it comes out of a packet mix from Costco.
So, we went to Costco and found the mix that she was talking about and it was so easy, we just had to add some oil and some eggs and they came out perfectly, every time, which was great for me, as I don't see myself as a naturally great cook, I'm the kind of person that would always burn myself when cooking, or burn what I was cooking! Also, my concentration is not my strong point, so remembering where I am in a recipe or even planning ahead to pre-heat the oven, is still an achievement in itself. That I suppose, would be the end of the story, if I didn't feel passionately about Fairtrade and making sure that our cakes do something to help heal the planet and are ethical too. I called up the mix manufacturer and asked if they would be doing a Fairtrade version, with Fairtrade chocolate and sugar in and they said that it wasn't on their radar at all. I was really disappointed and after a lot of thinking decided to try to create a recipe as simple as theirs, no egg separation needed, no fancy stuff, just quick ingredients that you can throw in the bowl and then cook and it comes out right, every time, no matter who makes it and it is Fairtrade and I decided that I wanted to make it Gluten-Free too.
So, I tried and I tried and I tried, again and again and our customers were lucky enough to taste them and tell us what they wanted it to taste like, then one day, after lots of failures, I created a recipe that tasted so beautiful, gooey, chewy and rich but with a clean aftertaste! Success! Not only that but it was Fairtrade and Gluten-free too.
Well, after that build-up, you'll want the recipe now, won't you!
I write my recipes as step by step instructions, how you would do things logically, none of this suddenly being told to put things in a pre-heated oven, without being told it needed to be pare-heated, at the beginning of the recipe.
Best Brownies Ever, Fairtrade, Gluten-Free, Dairy-Free, with Free Range Eggs. Suitable for Vegetarians.
1/ Preheat the oven to 170 Degrees Celsius
2/ Line a 9 x 13 inch baking tray with grease-proof paper and grease with oil.
3/ Into a big bowl put 450g of raw cane caster sugar, Fairtrade, with 3 eggs and 1 teaspoon of Fairtrade Vanilla Extract. Mix together well, with a fork.
4/ Into a measuring jug, measure out 200ml of vegetable oil, then add 70g of Divine Cocoa Powder. Mix these together well with a fork and then add to the sugar and egg mix and mix it all together.
5/Next, measure out 120g of Doves Farm Organic Gluten Free Self Raising Flour and add 1 and a half teaspoons of Doves Farm Gluten Free Baking powder and add this to the chocolatey mixture, stir in well.
6/ Take a 100g bar of Divine Dark Chocolate and smash into pieces whilst still in the packet, using a rolling pin, I prefer a hammer though!
7/ Mix the chocolate pieces into the mix.
8/ Pour and scrape the mix into the prepared baking tray.
9/ Place in to the preheated oven for 19 minutes. Then take out, cover with foil and place in the oven for another 19 minutes.
10/ Take the brownies out and give them time to cool, then serve up and enjoy!
These brownies are great for a teatime treat, or even as an extra delicious dessert. If you can't be bothered to make them for yourself, then please pop into our shop and get some.
These brownies are full of sugar, so they are not the healthiest thing in the world to eat but they are very, very tasty and enjoyable!

5 Coffee Shop Business Secrets for Beginners.
1/ Know what you are selling...
You are NOT selling coffee, it's usually something else, for instance in our shop, we are selling a good feeling, community, comfort, an experience and usually a change of mood, from grumpy to grinning in 30 seconds!
2/ DON'T tie your money up in loads stock.
Strict stock control is an absolute must, having lots of stock hanging around means that you are paying effectively for storage space, when those things could be at your suppliers, until you need to order again. You'll find that as with anything 20% of your stock will sell about 80% of the time, concentrate on never letting that run out. But don't waste rent money on space, stocking stuff that sells only slowly.
3/ Don't be a leader!
That's NOT the aim, just be different. When you compete on difference, that enables space for other people to enjoy success within a similar sphere to you. Coffee shop owners needn't be in competition with each other, as long as their differences are highlighted and strong, that then leaves opportunities to collaborate with each other.
We enjoy an excellent cafe round the corner from us, called Michaelangelos and we enjoy supporting them and spending our money in another independent, we love recommending them to our customers too. Yes, we both sell coffees and cakes which is a large cross over but there's also massive differences between us, for example, they do fabulous lunches and we do fabulous networking and events.
4/ Change your way of thinking.
If there is something that you perceive to be a huge negative factor, in your business....twist it around and see the positive! Believe me there is a positive in every negative, you just have to look very hard for it.
When we first opened our shop at the end of a train station platform, people said it was in a difficult location, not much footfall right up to the door and so on. We looked at the premises and saw it's potential as a hidden gem, that turns it around doesn't it! Now it's a truly magical moment when someone discovers us, they open the door from a cold platform and the atmosphere of our coffee shop seems to glow, with warm and welcoming shades of oranges and browns, laughter and chatting, books and flyers, they are amazed by the contrast of how it is outside to how it is when they open that door and the warmth embraces them.
5/ Keep Your Door OPEN!
When you are open, keep your door open! At first people are scared to walk into a new place, you have to remove any barrier that you can and that door can be a big barrier. I have seen people push on our door handle half-heartedly and then walk away when it doesn't open easily.
Keep your door open and make it easy for them to make the transition from outside, to inside, at least until you are established. Bring tasters outside to them on a platter, bring coffee out to them leaving the sugar and so on in the shop, so they have to come in to use the sugar.

Fairtrade Fortnight 2012
I'm gearing up for tomorrow! I have my t-shirt, I have the brochures, I have the stickers, I have the products, I've got the ingredients for cake, yeah, I have my cake and I'm going to eat it and I'm going to make sure that you get some too! And it's all Fairtrade!
Monday the 27th of February, is the start of Fairtrade Fortnight and it runs up to Sunday the 11th of March.
The aim of Fairtrade Fortnight this year is to get 1.5 million steps for Fairtrade registered as actions. so, this Fairtrade Fortnight is to inspire you if you've taken a step before, or if you've never taken a step before! There are so many different steps that we as individuals or businesses can take, they might be small steps but each of them added together can make one big step, to help farmers and they communities in developing countries to receive fairer payments, fairer wages and fairer conditions.
Our Fairtrade Story
When we opened our coffee shop 3 years ago and we made a pledge to ourselves to use only Fairtrade coffee, not to offer a choice but to commit 100% to Fairtrade coffee, despite the tough economic times, we knew that it was the only way that we could feel good running our business. As individuals, our business is an extension of ourselves and what I wouldn't feel comfortable doing in my personal life, I will not do in my business life either. So, yes, we chose Fairtrade coffee, we went on to choose after just a couple of months Fairtrade tea and chocolate and we just kept expanding the amount of Fairtrade that we did, until after just 6 months we bought our own oven specifically so that we could commit to using Fairtrade ingredients in our cakes.
How did this passion for Fairtrade begin? Well, I read about it in a pamphlet from the Fairtrade Foundation, just a month before we opened our coffee shop. I had not heard of Fairtrade before that time. That's what inspired me to create a guide to the independent shops in Enfield that sell or serve Fairtrade, you can pick one up in our shop, or you'll find me out and about during Fairtrade Fortnight, encouraging other individuals and businesses to 'Take a Step' for Fairtrade and I'll have a stack of them with me then, to give out.

Fairtrade shouldn't be a unique selling point!
The decision that my partner Gunter Hollenstein and I took, to stock Fairtrade was hardly a decision but more of a heartfelt step that we knew we had to take. Is there really a choice? If you know that one way of trading means that checks have been made, premiums paid and a minimum price band introduced and another means that workers are unable to unionise, that there is no guaranteed price and communities are not given additional help, then why would you, or even could you choose any other way? The Fairtrade labelling system guarantees that the farmers of that product in the developing countries have been given a Fair deal, as specified by internationally agreed trading standards.
I don't want My Coffee Stop stocking a good range of Fairtrade products to be our unique selling point! This is a unique selling point that, I'm wishing wasn't!
I actively encourage and delight in telling other coffee shop owners the excellent Fairtrade suppliers that we've found, so that they can support Fairtrade too and that's why suppliers are listed for everyone to see and use in the Fairtrade Guide that we have produced.
Fairtrade Fortnight Launch!
Just over 6 months after the riots in Enfield, I'll be taking to the very same streets to launch Fairtrade Fortnight in Enfield. I'll be wearing my Fairtrade tee-shirt, armed with stickers, the Enfield Fairtrade Directory and cards on which to register step/s and I'll be encouraging individuals and businesses to 'Take a Step', with me for Fairtrade!'
I'll be starting out at the Civic Centre in Enfield and will work my way up through the high street and back up to My Coffee Stop at Enfield Chase Station. I'll pick out people and businesses randomly to approach and encourage to 'Take a Step' for Fairtrade, in the hope of helping the Fairtrade Foundation accomplish a grand total of 1.5 million registered steps!
The launch will take place at 10am on the first day of Fairtrade Fortnight, Monday February 27th, outside the Civic Centre, by the chunky Enfield sign.
Keep an eye out for me throughout Fairtrade Fortnight, as you never know when I might appear and ask you to 'Take a Step' with me!
